BEET SALAD

220gr raw beet
3tbsp olive oil
10gr tarragon
1tbsp thyme
15gr fresh mint
pepper
300gr raw kale
20ml vinegar
40gr feta cheese

Preheat the oven to 200C degrees
Place the beet in a baking dish and pour water to cover it.
Bake for 1 hour.
In a medium bowl,combine the vinegar with the seasonings.Add the olive oil and mix.
Remove the beet from the oven and let it cool.Peel after cooling.
Cut the beet into cubes and place it in a bowl.Pour the dressing on it.
Divide the kale into 4 portions.Divide the beet equally in each portion.Sprinkle with feta cheese and serve.
