CHOCOLATE CAKE WITH CREAM CHEESE FROSTING
And let me introduce to you one of my best and my favorites sugar-free desserts.This healthy,coconut flour,loaf pan chocolate cake is the best ever.Without refined and excess sugars.Without refined flour.And without excess saturated and trans fats.Absolutely amazing.Just one easy to prepare and make healthy treat.Which will satisfy your hunger cravings foe something sweet or something unhealthy.
It is like that you are cheating on your diet,but you do not have to worry about this.Just keep calm and enjoy a sweet piece of this yummy cake.In my previous post,I said that the chocolate and cocoa are one of my favorite foods.I really enjoy them.And you too,sure?
I really like brownies and chocolate cheesecakes.Also my homemade nutella ,sugar-free chocolate crepes and chocolate truffles are three of my best favorites sweet things.Everyone like chocolate but in the most cases it is unhealthy and full with sugar and fat.This is really bad for our health.I like to stick with the sugar-free and low-fat version of all chocolate and other dessert recipes.
And today I will show you one of these healthy versions of chocolate cake recipe.It is made without sugar and refined flour.
The sweetness.For sweetness I like to use powdered or liquid stevia.The stevia is all-natural product and it is perfect alternative to sugar.Another natural sweeteners are raw honey,natural maple syrup and raw agave syrup.But they will make the cake higher in calories and carbohydrates.Other calorie free option for sweetener is the sucralose.It is really sweet with zero calories.But it is not natural.So the best choice is the stevia.
The flour.For the flour,I am using coconut flour to make this cake lower in carbs,but any other flour like whole wheat flour which is my favorite will be good too for this cake.But the result will be higher in carbs.The coconut flour makes the cake fluffier when is combined with baking powder.And adds some coconut taste to it.Chocolate+coconut is one of the best combinations ever.Like Bounty!Haha,just kidding.Another ingredient which will make the cake extra fluffy is the apple cider vinegar.It sounds weird,but trust me,the result will be awesome.And to make this cake thicker,you will need some xanthan gum,which is the best ingredient for cake recipes and other baking goods.
The chocolate taste.To make the chocolate taste and flavor for this cake,I used unsweetened dark cocoa powder because it adds a specific taste which I really like and enjoy and unsweetened chocolate chips.The regular unsweetened or baking cocoa powder are also good.And you can use unsweetened baking chocolate instead of chocolate chips.
The cream cheese frosting.For the topping on this yummy chocolate cake,I made a frosting from low-fat cream cheese and liquid stevia,but the regular or fat-free cream cheese will be also good.I think that the mascarpone cheese or ricotta cheese will be also tasty and good for this type of frosting.You can add unsweetened cocoa powder to the frosting to make this yummy cake even more chocolaty.Or some of my homemade peanut butter.For the vegan option,you can use coconut cream.And for final,I topped it with some sliced cherries.Other good and healthy options are sliced strawberries or sliced banana.Yummy!
This frosting is optional but the taste with it is much better and sweeter.You should make it,if you want the best chocolate cake.Before adding it to the cake,I sprinkled some more powdered stevia on the top of the cake.
I also used some instant coffee granules to add some extra taste and flavor to this cake. And it was good. Very good.

- 3/4 cup or 70 grams coconut flour (or any other type of flour)
- 1/2 cup or 120 grams of powdered stevia (or equal amount of liquid stevia) (or any other healthy sweetener)
- 1/4 cup or 25 grams unsweetened dark cocoa powder (or regular or baking unsweetened cocoa powder)
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon instant coffee granules or 1 shot espresso (optional)
- 1/2 teaspoon Himalayan,table or sea salt
- 1/4 teaspoon xanthan gum for thickness
- 6 large size whole eggs (or flax or chia eggs for the vegan option)
- 1/2 teaspoon vanilla extract
- 2 teaspoon apple cider vinegar or wine vinegar
- 4 ounces or 110 grams unsalted low-fat grass-fed cow butter (or coconut butter or cream for the vegan option)
- 1 ounce or 30 grams sugar-free chocolate chips or baking chocolate (or regular sugar-free chocolate)
The cream cheese frosting
- 1 cup low-fat or fat-free cream cheese (or regular cream cheese) (softened) (or coconut cream for the vegan option)
- 2-3 tablespoons liquid stevia (or other healthy sweetener of your choice)
- sliced cherries or berries for topping
- The first step is to preheat your oven to 350°F or 175°C degrees.
- Get a loaf or bread pan,place a baking or parchment paper in it and spray with some non-stick cooking spray.Or grease with some more butter or oil.
- Put all of the dry ingredients in a large mixing bowl and mix them by hand or with mixer.
- Take the butter or coconut butter and the sugar-free chocolate chips and place them in a microwave-safe bowl.Put the bowl in the microwave for about 30 seconds.Remove from the microwave,stir and put it back in until it is completely melted and well combined.
- Beat the eggs and them to the bowl with dry ingredients.After that,add the vanilla extract and apple cider or wine vinegar.
- Stir everything together,then add the melted butter with chocolate chips.
- Mix well everything until you have nice and thick chocolate cake batter.
- Pour your batter into the greased loaf or bread pan.
- Put the pan in the preheated oven and bake the cake until a toothpick comes out clean when inserted in the center.About 30-40 minutes will be good.Every type of flour is different and the baking time will be different for each type.
- After the cake is done,remove from the oven and cover it with a towel for about 15-20 minutes to keep it moisture.
- After that,use a knife or small spatula to remove the baked cake from the pan.
- To make the cream cheese frosting,beat your low-fat or fat-free cream cheese with 2-3 tablespoons of liquid stevia.
- Sprinkle some more powdered stevia on the top of the cake.
- Spread the frosting over the ready cake.
- Slice some cherries or berries like strawberries or raspberries and top the cake with them.
- Serve immediately or wait until is cooled completely and enjoy chilled.
- That is it.You just made your own healthy and sugar-free chocolate cake at home.
- You can add some more unsweetened cocoa powder to the cream cheese frosting to make the cake even more chocolaty.And other good option for topping are is some sliced banana.It will be great.
