Ingredients
  1. 1 tomato (diced into cubes)
  2. 1/2 cup diced tofu
For the black bean dip
  1. 1 can black beans (washed and drained)
  2. 1/4 cup medium onion (diced)
  3. 1/2 jalapeno pepper (chopped)
  4. 1 garlic clove (chopped)
  5. 2 tablespoons fresh coriander (chopped)
  6. juice from 1/2 lime
  7. 1/4 teaspoon cumin powder
  8. salt and black pepper to taste
For the guacamole with sweet corn
  1. 2 ripe avocados
  2. juice from 1/2 lime
  3. 1 garlic clove (crushed)
  4. salt and black pepper to taste
  5. 3/4 cup sweet corn (frozen or canned)
  6. 2 tablespoons fresh coriander (chopped)
Instructions
  1. Place all ingredients for the black bean dip into food processor or high speed blender and blend everything very well until you have creamy,homogenized mixture.
  2. Spread this mixture on a deep plate or other deep dish and put it in the fridge while you are making the guacamole.
  3. To make the guacamole,peel and mash the avocados in a bowl.
  4. Add the other ingredient without corn and coriander.
  5. Mix well everything.
  6. Finally,add the sweet corn and coriander and mix again.
  7. Remove the dish with the dip from the fridge and spread the guacamole over it.
  8. Sprinkle with the diced tomato and tofu on the top and serve.
  9. Enjoy the yummy taste.
Notes
  1. You can double or triple this recipe to make it in a larger amounts.If you want,add other seasonings and spices to adjust it to your preferences.Enjoy!
