  • 4 garlic cloves
  • 2 tbsp fresh rosemary
  • 1 cup red wine
  • 1 cup soy sauce
  • 1 tbsp fresh mint
  • 1 kg raw lamb meat
  • 100 gr unsalted butter
  • 250 gr black currant jam
  • 80 gr tomato sauce
  • 1 fresh orange

1.Put the garlic,rosemary,wine and half of the mint in a bowl and mix. Debone the meat.Place it in a baking dish and pour the wine mixture on it.Leave it in the fridge for overnight.2.Preheat the oven to 220C. Bake the meat for 10 min.Reduce the heat to 200C degrees and continue the baking for another 30-35 min.Remove it from the oven,cover with foil and leave it to rest for 15 min.3.In the meantime,preheat a pot and put the butter,jam,tomato sauce,orange zest and the other half of the mint in it.Cook for about 8-10 min until the consistency is like a sauce.4.Cut the meat into steaks and place it in serving plates.Top it with some of the sauce and serve.5.Enjoy!
