  • 300gr. eggplant
  • 4 tsp extra virgin olive oil
  • 1/2 tsp table salt
  • 1/2 tsp black pepper
  • 50gr. tomato sauce
  • 60gr. grated mozzarella cheese

1.Peel and cut the eggplant into washers with 1cm thick.2.Preheat the oven to 220C degrees.3.Cover the two sides of each washer with some olive oil and season with some salt and black pepper.4.Place them on a foil or baking paper,put in a baking dish and bake them for 6-8 min or until golden brown.5.Remove them from the oven and spread some of the tomato sauce on each washer.6.Sprinkle some mozzarella on top and put them back in the oven for 3-5 min or until cheese is melted.7.Serve hot.You can sprinkle a little bit of basil on the top for more flavour.
