PARMESAN CHICKEN WITH EGGPLANT

Delicious post workout meal.

200gr eggplant
1 small onion
1 chicken breast
50gr marinara or tomato sauce
50gr grated parmesan cheese
1tbsp olive oil
1/2 tomato
1tbsp garlic powder
2tbsp basil

In a pan with olive oil,cook the chicken and onion.Season with salt and pepper.
Cut all of the vegetables.Put them with the chicken and onion in a baking dish.Pour a little bit of olive and mix everything.
Add the sauce.Sprinkle with parmesan.
Bake in the oven on 180C degrees for 30-35min.
