1 large red onion
3tbsp whole wheat flour
1/2tsp curry powder
1/2tsp ground nutmeg
2 garlic cloves(crushed)
200gr sweet potato(peeled and cubed)
750ml chicken broth
420gr canned pumpkin
1 cup milk
1tbsp lime juice
Melt the butter in a large pot.Cook the chopped onion in it for 3-4min.After that,add the flour,curry,cumin and nutmeg.Cook for 1 min more.
Add the sweet potato,salt,chicken stock and pumkin and leave it to boil.After boiling,reduce the heat,and simmer for 20-25min until the potatoes are soft.
Remove the pot from the heat and cool down for 10min.
Use a hand blender and blend the soup to make something like a puree.
Return the pot to the heat and add the milk.Simmer for 5min. and stir.
Serve with some lime juice into each portion.
