Ingredients
  1. 150 grams uncooked quinoa
  2. 1 medium size iceberg salad lettuce (optional)
  3. 1-2 medium size red tomatoes
  4. 1 medium size fresh cucumber
  5. 1-2 medium size green peppers
  6. 1 medium size carrot (optional)
  7. 50 grams olive paste
  8. Himalayan,sea or table salt to taste
  9. 2 tablespoons extra virgin olive oil
  10. 2 tablespoons wine or apple cider vinegar
Instructions
  1. The first thing to do is to chop the iceberg salad lettuce in a large salad bowl or plate.
  2. Wash and dice the tomatoes,cucumber,green peppers and carrot into pieces.
  3. Ad them to the bowl with chopped lettuce.
  4. Soak the quinoa in water for about 15 minutes.After this,drain.
  5. The ratio for cooking quinoa with water is one part quinoa-two parts water (1:2).
  6. Place the drained quinoa into pot and pour the water over.
  7. Wait the water to boil and then,reduce the heat to low and cook for about 15 minutes until all of the water is absorbed.
  8. After cooking,add the cooked quinoa to the salad bowl.
  9. Season with some salt and black pepper. (you can add any type of seasonings and spices to the bowl)
  10. Next is to add the olive paste,vinegar and extra virgin olive oil to the bowl and to stir everything very well.
  11. Serve into plates or bowls and enjoy the great taste and flavor.
Notes
  1. You can make your own olive paste at home.Just add some black or green olives to high speed blender or food processor and a little bit of extra virgin olive oil and process until the mixture is homogenized and creamy.
  2. If don't like olive paste,you can use just black or green olives or dried tomatoes instead.
